Lamb Shish Kebab
Combine lemon juice, oil, minced onion, garlic, pepper and salt in a small bowl. In a glass dish, place lamb and onions. Pour marinade over, cover and refrigerate at least 6 hours. Stir lamb occasionally. Drain and discard marinade. Thread onions, lamb, zucchini and a lemon wedge on a skewer. Barbecue over hot coals at least 6 minutes per side. Makes 4 servings.
