Waffle Breakfast Sandwich

A hectic morning is typical for all parents. The kids are usually running around the house in a frenzy. Trying to prepare them for school and make breakfast simultaneously can be almost impossible. The best way to get them out the door on time is to keep it simple. Try this delicious and simple recipe for a waffle breakfast sandwich with bacon. This recipe can be a fun, delicious twist on the traditional breakfast sandwich.

Prep time: 10 min

Cook time: 20 min

Total time: 30 min

 

Ingredients:

1/3 cup pancake mix, complete

Non-stick cooking spray

3 Eggs (large)

4 each bacon slices

1/4 cup American cheese

Waffle iron

 

Directions:

 

Preheat the waffle iron with a non-stick cooking spray. Follow the instructions on the pancake mix to create the batter. Then pour 1/3 cup of the batter into the waffle iron and cook for 3 minutes. Check the waffle to see if it’s done cooking. Heat a medium-sized skillet on medium heat until hot. Add bacon and cook till it’s crispy. Remove the bacon and set it aside on paper towels. Whisk the eggs in a medium size bowl and gently pour them into the skillet. As the eggs begin to set, pull across the skillet with a spatula forming soft curds. Continue cooking until eggs are no longer liquid, remove from heat and move cooked eggs to plate. When the waffle is ready, remove and let cool slightly. Slice the waffle into fourths. Set two pieces aside for the bottom and stack ½ the scrambled eggs, two bacon slices, and cheese. Top with the remaining two waffle pieces and enjoy.
