Yum! Rice Krispy Baked Chicken

Growing up, whenever my mom needed a super quick and easy meal to make for dinner, she would often make Rice Krispy baked chicken, a dinner that everyone always enjoyed. This recipe came from my mom’s grandma, who was very big on making meals that were nutritious, and filling, but still quick and easy. This recipe only requires 6 simple ingredients and only takes a little more than an hour to make.

Ingredients:

  • 8-10 pieces of chicken
  • 1 Cup Rice Krispies Cereal
  • 1/3 Cup Vegetable Oil
  • 1/2 Teaspoon Salt
  • Pepper to taste
  • 1/4 Teaspoon of Lawry’s Seasoned Salt

Directions:

  1. Rinse chicken pieces and pat dry with a paper towel.
  2. Crush Rice Krispies into crumbs (Putting in a Ziploc bag and rolling with a rolling pin or hitting with a meat mallet works very well).
  3. Mix oil, salt, pepper, and Lawry’s salt in a small bowl.
  4. Coat chicken pieces in the oil mixture and then roll in Rice Krispy crumbs.
  5. Place coated chicken pieces on a foil lined baking sheet.
  6. Bake uncovered at 350 degrees for about 1 hour.

 

A fun twist that my mom has done occasionally is to substitute other seasonings for the Lawry’s seasoned salt. One that my family really enjoys is Cajun seasoning, as we are big fans of spicy food, and that seasoning gives the chicken a nice little kick!

This dish pairs really well with a vegetable side such as steamed green beans, or mashed potatoes.
