Chickpeas with Lemon
Place chickpeas in a large bowl. Rinse and remove any foreign matter. Cover chickpeas with boiling water and soak for at least 4 hours. Drain. Cover chickpeas with fresh water and simmer for 60 minutes or until tender. Combine lemon juice, olive oil, salt, oregano, and green onions and pour over chickpeas. Serves 5 to 6.
