Favorite Recipes From Fill Your Plate Moms: Chili Chicken

Editor’s Note: We’ve asked some of our Fill Your Plate “Moms” to share some of their favorite recipes, especially those that can fill up the family and do it in a healthy way!

SLeysao, one of our first Moms to submit is Leysa Rought ofWinkelman, Arizona. Her family moved to the small mining community in 1980. A real estate agent for Weichert, Realtors-Lake Realty in Gold Canyon (yes, she drives that far for work), she loves living in a smaller hometown community. Prior to real estate, Leysa worked as a veterinary technician and for a time owned her own business, Body ‘N’ Such Creations. She produced 100% natural handmade soaps and spa products. She’s a graduate of Central Community College with an associates in agricultural business. Leysa has three nieces and a nephew that have lived with her on and off that are like her own children with two great nieces and a great nephew and two on the way. She loves to hike, read, ride, garden and most of all cook for family and friends. 

Chili Chicken

Ingredients:

  • 2 cups Cooked Chicken
  • 2 cans Cream of Chicken Soup
  • 1 soup can Milk
  • 1 cup Sour Cream
  • 1 Small can diced green chilis (I use fresh roasted green chilis)
  • 1/4 cup Chopped Onion
  • 2 cups Grated Colby/Jack Cheese

Directions:

Stir together soup, water, sour cream, green chilies and onions. Pour over cooked chicken. Top with grated cheese. Bake at 350 for 30 minutes. Serve over rice and enjoy! Provided by: Sine Kerr of Kerr Dairy

I made this great casserole meal today.  This was a simple and quick recipe. It is a great budget stretcher and would be great for pot lucks and other gatherings or those nights when you need to throw something together.

The recipe called for 2 cups of already cooked chicken so I used chicken that I had made the night before.

I put the whole thing back in the deep covered baker and baked it. Using the deep covered baker would  you to pop this in the microwave for about 20 minutes.  I also used reduced fat cream of chicken soup and reduced fat sour cream to cut down on some of the calories and served it over cooked rice.
