French Canadian Crepes

By Gabrielle Hungate a recent ASU Nutrition Student

This recipe has been in my family for close to 70 years, and it has been something that has been passed down to several generations. There are many ways to eat traditional crepes. The French-Canadian way it to serve only with syrup. Some traditional people will serve with a pat of butter. There is already butter in the mixture, so I left that out. These crepes are gluten-free, but they are also made with regular flour as well. They are very tasty, both ways.

Gluten-Free French-Canadian Crepe Recipe

1 1/2 C. gluten-free flour (Bob’s Red Mill All-Purpose Baking Flour) gluten-free flour
1 C. whole milk
1/2 C. evaporated milk
3 eggs
2 tbsp. melted butter
1/4 confectioner’s sugar
1 tsp vanilla

Mix all together with wire whisk until well blended. Use one soup ladle per crepe. Let cook about 1- 2 minutes before brown. Pan will need to be hot on medium to high heat in order to brown appropriately.
