One of my favorite deserts is homemade virgin pina coladas, put in the pineapple we used to make the drink! Here’s what you’ll need to make this delicious drink:
Pineapple core tool (find it here)
Recipe by The Spruce Eats
1 1/2 cups unsweetened fresh or frozen pineapple chunks
1/4 cup ice
3/4 cup unsweetened pineapple juice
3/4 cup unsweetened coconut milk
- Place the pineapple chunks and ice at the bottom of a blender.
- Pour the pineapple juice and coconut milk over the top. Puree until smooth. Taste to test the sweetness.
- Pour into glasses and garnish with fresh pineapple wedges or a maraschino cherry.
- Serve immediately and enjoy.
