- Protein-Packed Fresh Medjool Date Chia Pudding Parfait

- 1 1/3 cup plain Greek yogurt
- 1/4 cup date paste (see recipe)
- 1/4 cup white (or black) chia seeds
- 1/2 cup unsweetened almond milk
- 1 cup sliced strawberries
- 1 cup Medjool dates - pitted and roughly chopped
- 4 tablespoons creamy peanut butter
- 1 1/2 cup Granola
- Directions
- In a medium size bowl, combine the yogurt, chia seeds, date paste and unsweetened almond milk. Cover and refrigerate overnight In the morning slice the strawberries and Medjool dates. Grab 4 glasses and start layering each glass with approximately 2 tablespoons of the granola. Add about 3 tablespoons of the chia seed pudding, a scoop of peanut butter, another 2 tablespoons of granola, some of the Medjool date chunks and the sliced strawberries, repeat starting with the chia seed pudding.
