Acorn Squash with Pomegranate Seeds
Quarter the acorn squash and remove the seeds
Place in a deep dish with 1/2 inch of water and bake at 375 for 50 minutes (skin side up)
Pour off water and turn over the acorn squash. Put one teaspoon of thick apricot jelly in each squash quarter and sprinkle with pomegranate seeds.
Broil for 5-7 minutes, remove, and serve.
Beautiful for the holidays, good for you and tastes good too!
