Stuffed Mushrooms

Ingredients:
- 4 Portobella Mushroom Caps, 5 Inches Wide
- 2 to 3 Plum Tomatoes, Chopped
- 1/4 Cup Chopped Kalamata Olives
- 1 Tsp Minced Garlic
- 2 Tsp Extra Virgin Olive Oil, Divided
- 1/2 Tsp. Finely Chopped Fresh Rosemary
- 1/8 Tsp Freshly Ground Pepper
- 2 T Lemon Juice
- 2 Tsp Soy Sauce
- 1/2 Cup Shredded Part-Skim Mozzarella Cheese
Directions:
Clean mushrooms and let dry on a paper towel. Cut stems off and chop into small pieces. In a mixing bowl, combine mushroom stems and all of the ingredients, except cheese. Scoop mixture out equally into mushrooms and sprinkle with cheese. Cook at 350 degrees for 30 minutes.
