Orange and Avocado Salad
Provided by:
Southwest Family Citrus and Spenar Family
Ingredients:
- 1 Bunch Baby Spinach Leaves
- 1 Cup Shredded Red Cabbage
- 2 Oranges
- 2 Avocados
- 1 Tbsp. Lemon Juice
- 3/4 Tsp. Sugar
- 3/4 Tbsp. Dijon Mustard
- 1 Garlic Clove, Crushed
- 3 Tbsp. Light Olive Oil
- Salt and Pepper
Directions:
Rinse and dry spinach. Tear and put into salad bowls. Toss in the shredded cabbage. Peel and cut oranges ( make sure bitter white pith is removed ). Gently mix the two and let sit. Make a dressing by combining the remaining ingredients in a jar and shaking until sugar is dissolved. When ready to serve, gently add oranges and avocados top lettuce and pour 3 tablespoons dressing and toss lightly. Add more dressing to taste or save for another salad.
