Apple Date Butter

Ingredients:
- - 2 pounds apples (about 6-8, depending on size), peeled, cored, and roughly chopped
- - 1 cup apple cider
- - 20 Natural Delights® Medjool dates, pitted and roughly chopped
- - 2 teaspoons cinnamon
- - ⅛ teaspoon allspice
- - 1 tablespoon lemon juice
- - 1 tablespoon vanilla
Directions:
Place the apples, dates, and cider in a large saucepan and boil over medium heat. Reduce the heat to a simmer and simmer for 20 minutes, stirring occasionally.
Add cinnamon, allspice, and lemon juice. Bring the mixture to a boil and then reduce heat to a simmer for 30 minutes, stirring occasionally. The mixture should thicken, and the apples should be tender. Add the vanilla and stir to combine.
Remove the mixture from the heat and cool it slightly. Then, add it to a food processor and blitz until smooth (3-5 minutes).
Store the cooled mixture in airtight containers in the refrigerator.
