Recipe Details:

Creamy Date and Vanilla Rice Pudding
- 3/4 c uncooked white rice (short grain or arborio)
- 2 c heavy cream, divided
- 1/3 c white sugar (at end)
- 1/2 tsp salt
- 1 egg, beaten
- 12 pitted medjool dates, diced
- 1 Tbsp butter
- 1 tsp vanilla extract
1. Bring 1 1/2 cups water to a boil in a saucepan then stir the rice into the boiling water.
2. Reduce the heat to low, cover, and allow to simmer for 20 minutes.
3. In a clean saucepan, combine 1 1/2 cups cooked rice, and half of the heavy cream.
4. Cook over medium heat until thick and creamy (about 15 to 20 minutes).
5. Stir in the remaining heavy cream along with the sugar, beaten egg, and dates.
6. Cook for 6 minutes (or until the sugar dissolves), while stirring constantly.
7. Remove from heat and stir in the butter and vanilla.
