Asian Chicken and Broccoli with Peanut Sauce
In a large pan, heat 1 tbsp of olive oil and 1 tbsp of soy sauce. Add chicken breast and onion and start cooking. After 8 minutes, add the chopped broccoli. Once all is cooked, remove from heat. In a small saucepan, add peanut butter, water, soy sauce (3 tbsp), lime juice, honey, paprika, garlic powder, and red pepper flakes. Heat on low and stir together until it starts to thicken. Add more water if the mixture is too thick. Dish out some of the chicken and vegetable mixture onto a plate drizzle the peanut sauce. Serve with brown rice, quinoa, or more veggies.
