Baked Chicken Nuggets
- 2 cups bread crumbs
- 1/4 cup grated parmesan cheese
- 2 tsp salt
- 1 tsp pepper
- 1 tbsp Italian seasoning
- olive oil or avacado oil
- 1-2 lbs chicken breast
Preheat oven to 425* F. Cut chicken breasts into small nugget cubes (about 1 in. big). In a bowl, combine bread crumbs, parmesan cheese, salt, pepper, and italian seasoning. Mix well. Add about 1/8-1/4 cup of olive oil to another bowl. Take the nuggets of raw chicken and lightly dip them in the olive oil. Then, roll them in the bread crumb mixture and set on a cookie sheet. Do this until all pieces have been covered. Bake for 10-15 minutes or until chicken temperature reaches 165*F. Serve with roasted veggies or salad.
