Banana Bran Muffins
  • 4 Very Ripe Bananas; mashed and equaling 1 1/2 Cups
  • 1 1/2 Cups All-Bran Cereal
  • 2 Eggs
  • 1 Cube Butter (stick)
  • 3/4 Cup Sugar
  • 2 Cups Flour
  • 1 Tps. Baking Powder
  • 1/2 Tsp. Salt
Cream butter and sugar until very light and fluffy. Combine mashed bananas with All-Bran and eggs. Mix well. Mix all the dry ingredients into the banana combination, mixing only until the dry ingredients are incorporated. Use a large ice cream scoop to fill a greased muffin pan. (For future Banana Bran muffins, always freeze over-ripe bananas and use as needed) Bake at 350 degrees for 15 to 20 minutes.
