Big Party Chicken Salad with Medjool Dates

Ingredients:
- 8 cups Chicken, cooked and cubed
- 2 cups Water Chestnuts, sliced
- 3 cups Pineapple chuncks
- 2 cups Grapes, seedless
- 2 cups Celery, diced
- 2 cups Medjool Dates, diced
- 2 cups Walnuts, sliced
- 1 tsp Curry powder (or more to taste)
- 2 tsp Soy sauce
Directions:
Gently fold all ingredients together. Refrigerate overnight. Combine the ingredients with enough of your favorite ranch or salad dressing to moisten. Serve in crisp lettuce cups.
