Recipe Details:

Broccoli Salad
- 1 Bunch Fresh Broccoli
- 1 Medium Red Onion
- 1 Tbsp. Extra Virgin Olive Oil
- 1/2 Cup Fresh Orange Dressing
- 1 1/2 Tbsp. Shredded Parmesan Cheese
Steam Broccoli until tender-crisp and cut into small pieces. Combine with sliced onion in a salad bowl. Drizzle with oil and sprinkle with pepper. Refrigerate. Add salad dressing a few minutes before serving. Toss Lightly and sprinkle with cheese.
Fresh Orange Dressing:
• Juice of 1 ½ oranges [about ⅓ cup]
• ½ Tbsp. raw honey
• 2 Tbsp. white wine vinegar
• ½ Tbsp. olive oil
• ¼ tsp. sea salt
• ¼ tsp. fresh black pepper
In a food processor or blender, combine all the ingredients and blend until smooth. Or simply put all ingredients in a bowl and whisk vigorously. Makes approximately 8 ounces of dressing. Shake before use. You can store in a refrigerator for up to one month.
