COTTAGE CHEESE & BLUEBERRY BREAKFAST BAKE
- 2 Cups Cottage Cheese
- 1 Large Egg
- 1/2 cup Flour
- 1/4 cup Sugar
- 1/2 teaspoon Baking Soda
- 2 tsp Lemon Zest
- 1 cup (at least) Blueberries
Preheat the oven to 350°F.
Grease a pie dish or an 8×8 baking dish with oil spray.
Mix wet ingredients – In a bowl, whisk together the cottage cheese, egg, sugar, and lemon zest (or vanilla) until well combined.
Incorporate dry ingredients – Add the flour, salt, and baking soda, gently mixing just until combined.
Avoid over mixing to keep the texture light. Fold in blueberries – Gently stir in the blueberries, being careful not to mash them. Bake – Transfer the mixture into the prepared dish and smooth the top. Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
Cool & Serve – Let it cool for a few minutes before slicing. Enjoy warm or refrigerate for a chilled treat. Optional – Whipped cream or sprinkle cinnamon, nutmeg or pie spice.
