Grapefruit Salad
Provided by:
Southwest Family Citrus and Spenar Family
Ingredients:
- 2 grapefruits
- 1/4 cup olive oil
- 2 tbsp. wine vinegar
- 1 tsp. fennel seed
- 1/2 tsp. salt
- 1 cup chopped jicama
- 2 green onions, chopped
- 1 large garlic clove, peeled
- 1 tbsp. sunflower seeds
Directions:
peel and cut up grapefruit. In a jar, combine oil, vinegar, fennel, and onions. Chill separately. Before serving, rub the salad bowl with the garlic. Add the grapefruit mixture and dressing. Toss. Sprinkle with sunflower seeds. Makes 4 servings.
