International Chicken

Ingredients:
- 1 orange,peeled,sectioned and cut into bite-size pieces
- 1 Roasting chicken
- 1/2 Cup canned pineapple chunks, drained
- 2 Oranges
- 1/4 Cup diced fresh mango
- 4 Tbs. Honey
- 1/2 Tsp. Ground Ginger
- 1 Lemon, Juice squeezed
- 4 Tbs. Soy sauce
- 1/2 Onion, grated
- 1/2 cup Slivered almonds
Directions:
In a small bowl, squeeze the juice of one of the oranges. Combine with honey, ginger, lemon juice, soy sauce, and onion. Set aside. Wash the chicken and pat dry. Put the chicken and 1 cup of water into a roasting pan. Stuff 1 of the peeled oranges inside the chicken. Pour the juice mixture over the bird. Roast at 400 degrees for 30 minutes, basting every 15 minutes. Reduce the heat to 35o degrees and cook for 45 minutes, continuing to baste. Sprinkle the chicken with almonds and finishing roasting another 30 minutes.
