- Lamb Shish Kebab

- 1/3 Cup Fresh lemon juice
- 3 Tbs virgin olive oil
- 1/3 Cup Minced Onion
- 4 cloves garlic, minced
- 1 Tbs freshly ground pepper
- 1 Tsp salt
- 1 1/2 lb. lamb sirloin roast, cut into 2-inch cubes
- 1 sm. red onion, cut into 8 wedges
- 1 sm. lemon, cut into 8 wedges
- 1 zucchini, cut into 8 wedges
- Directions
- Combine lemon juice, oil, minced onion, garlic, pepper and salt in a small bowl. In a glass dish, place lamb and onions. Pour marinade over, cover and refrigerate at least 6 hours. Stir lamb occasionally. Drain and discard marinade. Thread onions, lamb, zucchini and a lemon wedge on a skewer. Barbecue over hot coals at least 6 minutes per side. Makes 4 servings.

Apple Date Butter
Place apples, dates, and cider in a large saucepan and bring to a boil over medium heat. Reduce heat to simmer for 20 minutes, stirring occasionally.
Add cinnamon, allspice, and lemon juice. Return the mixture to a boil and then reduce heat to simmer for 30 minutes, stirring occasionally. The mixture should be thickened and the apples should be tender. Add the vanilla and stir to combine.
Remove from the heat and cool slightly. Add the mixture to a food processor and blitz until smooth (3-5 minutes).
Store cooled mixture in airtight containers in the refrigerator.
