Lemon Yams

Southwest Family Citrus and Spenar Family
Ingredients:
- 6 medium yams
- 1 lemon
- 1/2 cup skim milk
- 1/3 cup powdered milk
- 3/4 tsp salt
Directions:
Steam yams. Peel and mash with the juice of a lemon. In a jar, add milk, powder, and salt. Shake until well blended. Add to yams. Add water if needed. Beat hard until smooth and fluffy. Serves 6.
