Medjool Date Avocado Balls

Ingredients:
- - 8 Natural Delights® Medjool dates, pitted and roughly chopped + 1 tablespoon warm water
- - 1 large or 2 small ripe avocados
- - 1/4 cup 70% dark chocolate, melted
- - 3 tablespoons cacao powder
- - 2 teaspoons orange zest
- - 1/8 teaspoon sea salt
- - Topping Options
- - chopped toasted cashews, desiccated coconut, cacao powder
Directions:
Process Medjool dates with warm water in a food processor, scrapping down the sides as needed. Add a little more water if it doesn't form a paste.
Melt the dark chocolate in a double boiler on the lowest setting, gently stir as necessary. Be careful not to overheat.
Add the melted chocolate and the remaining ingredients to the food processor. Process until the mixture is a smooth paste. If too wet, add more cacao powder.
Turn onto a piece of parchment paper, cover with another piece of parchment paper and flatten. Refrigerate overnight.
The next day, scoop 1 to 2 tablespoons of the mixture in to your hand and roll into balls, then roll the balls in desired topping. Use a sifting jar for the cacao powder (if you have one).
