Medjool Date No Bake Mint Brownies

Ingredients:
- - Brownies:
- - 1 cup raw almonds
- - 1 cup raw walnuts + 1/2 cup roughly chopped for adding after processing
- - 2 1/2 cups Medjool dates, pitted and roughly chopped + 2 tablespoons warm water
- - 3/4 cup cacao powder
- - 2 tablespoon cacao nibs
- - 1/2 teaspoon salt (optional)
- - 1 teaspoon vanilla extract
- - 1 teaspoon mint extract
- - Ganache Frosting:
- - 1 cup Medjool dates, pitted and roughly chopped
- - 1/2 cup boiling water
- - 1/4 cup unsweetened cocoa powder
- - 1 teaspoon vanilla extract
- - 1 teaspoon mint extract
- - 1/2 teaspoon sea salt
Directions:
Brownies
1. In a food processor add almonds and walnuts and process until they are finely ground. Transfer to bowl and set aside. 2. Add Medjool dates and warm water to the food processor and blend until small bits remain - if too dry add a little more warm water. Add almond and walnut mixture and process with remaining ingredients. Stopping to scrape ingredients down. Remove blade and mix the remaining 1/2 cup roughly chopped walnuts by hand. 3. Transfer mixture to a parchment lined 8x8 dish and gently press to flatten. Rose places a piece of plastic wrap like Saran Wrap over mixture before pressing to flatten. Chill for 15 minutes before frosting. Ganache Frosting
1. Add pitted Medjool dates and boiling water to the food processor and blend until the dates form a paste. 2. Add remaining ingredients and blend until smooth. 3. Spread over chilled brownies.
