Mustard-Crusted Pork Roast

Ingredients:
- 2 pound boneless pork loin roast
- 2 tbsp spicy mustard
- 1 cup *garlic croutons, crushed
Directions:
Heat oven to 400°F. Season roast with salt and pepper, place in shallow pan and roast for 30 minutes; remove from oven, spread surface with mustard and sprinkle with crouton crumbs. Return to oven and continue to roast for 10-15 minutes longer, until meat thermometer registers 155°F. *Place croutons in plastic bag, roll with rolling pin until crushed.
