Oatmeal Grapefruit Quick Bread

Ingredients:
- 3 c. all purpose flour
- 1/2 tsp. salt
- 4 tsp. baking powder
- 3/4 tsp. baking soda
- 2/3 c. honey
- 1/4 c. margarine, softened
- 1 and 2/3 c. rolled oats
- 1 egg
- 1 and 1/4 c. grapefruit juice
- 1 c. chopped walnuts
Directions:
Preheat oven to 350 degrees. Sift together flour, salt, baking powder, and soda into a large mixing bowl. In a medium bowl, mix honey together with butter or margarine until creamy. Add to flour mixture along with the oats, egg, grapefruit juice, and walnuts. Stir together until smooth and pour into a lightly greased 9 x 5 inch loaf pan. Bake at 350 degrees for 1 hour or until a toothpick inserted in the center comes out clean.
