Orange Rice

Ingredients:
- 3 Tbs Butter
- 1 Celery Stalk, Chopped fine
- 3 Green onions
- 3 Tbs Minced parsley
- 1 Lg. orange, rind grated, juice squeezed
- 1 1/2 Cup Chicken or vegetable broth
- 1 Tsp. salt
- 1 Cup Long-grain rice
Directions:
finely chop celery, onion, and parsley and add to melted butter in a medium-sized saucepan. Cook and stir for 3 minutes. Add the broth, orange rind and juice, and the salt. Bring to a boil and add the rice. Stir, Cover and reduce the heat. Simmer for 25 minutes. Makes 4-6 servings.
