- 1 can (29 oz) pumpkin puree
- 20 Natural Delights® Medjool dates, pitted
- ¾ cup apple juice
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- ⅛ teaspoon allspice
- juice of ½ a lemon
- Directions
- Add pumpkin, dates, vanilla, cinnamon, ginger, nutmeg, and allspice to a large saucepan. Bring mixture to a boil. Reduce heat to simmer for 30 minutes, or until reduced by a third, stirring occasionally. The mixture should be somewhat dry and thicker than applesauce. Remove from heat, stir in lemon juice, and cool slightly. Add cooled mixture to a food processor and blitz until smooth. Cool completely. Store in airtight containers and refrigerate.
