Acorn Squash with Pomegranate Seeds
Quarter the acorn squash and remove the seeds
Place in a deep dish with 1/2 inch of water and bake at 375 for 50 minutes (skin side up)
Pour off water and turn over the acorn squash, put 1 teaspoon of thick apricot jelly in each quarter of squash and sprinkle with pomegranate seeds
Broil for 5-7 minutes, remove and serve
Beautiful for the holidays, good for you and tastes good too!
