- Southwestern Chicken Salad

- 3 whole chicken breasts, poached and shredded
- 1 small bunch fresh cilantro, minced
- 2 cloves garlic, minced
- 1 small red onion, julienned
- 5 Poblano Chile Peppers, roasted, peeled, seeded and julienned
- 4 Roma tomatoes, chopped
- red leaf lettuce
- goat cheese
- picked nopales (cactus)
- Southwestern Dressing:
- 1/2 cup fresh lime juice
- 1/4 tsp ground cumin
- 1 tbsp Durkee Dressing
- 1/2 cup extra virgin olive oil
- salt
- White pepper
- Directions

Whisk lime, cumin, Durkee, and oil. Add salt and pepper. Set aside. Combine chicken, cilantro, garlic, onion and chiles in a large serving bowl. Pour Southwest Dressing over salad and toss. Just before serving, toss in tomatoes. Serve on a bed of lettuce, garnish with goat cheeses and nopales.
