Southwestern Chicken Salad
  • 3 whole chicken breasts, poached and shredded
  • 1 small bunch fresh cilantro, minced
  • 2 cloves garlic, minced
  • 1 small red onion, julienned
  • 5 Poblano Chile Peppers, roasted, peeled, seeded and julienned
  • 4 Roma tomatoes, chopped
  • red leaf lettuce
  • goat cheese
  • picked nopales (cactus)
  • Southwestern Dressing:
  • 1/2 cup fresh lime juice
  • 1/4 tsp ground cumin
  • 1 tbsp Durkee Dressing
  • 1/2 cup extra virgin olive oil
  • salt
  • White pepper
Whisk lime, cumin, Durkee, and oil. Add salt and pepper. Set aside. Combine chicken, cilantro, garlic, onion and chiles in a large serving bowl. Pour Southwest Dressing over salad and toss. Just before serving, toss in tomatoes. Serve on a bed of lettuce, garnish with goat cheeses and nopales.
