Spicy Grilled Cheese with Medjool Dates, Prosciutto, Arugula & Serrano chilies

Ingredients:
- 4 thick slices of your favorite artisan bread
- 2 tbs Sriracha or spicy mayonnaise
- 8 oz. Manchego or firm cheese of your choice, sliced
- 4 oz. prosciutto, thinly sliced
- 4 Natural Delights® Medjool dates, pitted & roughly chopped
- 1 small serrano chili thinly sliced. Keep in the seeds if you like spice, omit seeds to tame heat.
- 4 oz. arugula
- 2-3 tbs. extra virgin olive oil
Directions:
Arrange two slices of bread on a cutting board.
Spread Sriracha on each slice
Layer bottom slice with all of the remaining ingredients.
Top with remaining bread slice.
Brush both sides of sandwich liberally with olive oil
Grill in a preheated cast iron pan to toast first side then flip to toast bottom side, about 8-10 minutes total or until golden brown and cheese is melted through.
Slice and enjoy while warm.
