Spring Salad
Provided by:
Southwest Family Citrus and Spenar Family
Ingredients:
- 3 Tbsp. Chopped Walnuts
- 2 Tbsp. Sugar
- 8 Cups Red Leaf Lettuce, Torn into Small Pieces
- 1 Apple, Chopped
- 6 Oz. Smoked Turkey Breast, Cut into 1-inch Pieces
- 1/4 Cup Red Onion, Thinly Sliced
- Dressing:
- 1/4 Cup Lemon juice
- 2 Tbsp. Olive Oil
- 1 Clove Minced Garlic
- 1/2 Tsp. Curry Powder
- 1/4 Tsp. Salt and Pepper
Directions:
In a jar, mix together dressing ingredients and refrigerate until use. Combine sugar and walnuts in a heavy skillet. Cook slowly over medium-low heat, stirring often until sugar has melted into the walnuts and they are brown. Remove nuts from pan and cool. To make salad: Combine greens, apple smoked turkey and red onions. Toss gently with curry dressing. Portion walnuts into plates and sprinkle with walnuts.
