Stuffed Mushrooms

Ingredients:
  • 4 Portobella Mushroom Caps, 5 Inches Wide
  • 2 to 3 Plum Tomatoes, Chopped
  • 1/4 Cup Chopped Kalamata Olives
  • 1 Tsp Minced Garlic
  • 2 Tsp Extra Virgin Olive Oil, Divided
  • 1/2 Tsp. Finely Chopped Fresh Rosemary
  • 1/8 Tsp Freshly Ground Pepper
  • 2 T Lemon Juice
  • 2 Tsp Soy Sauce
  • 1/2 Cup Shredded Part-Skim Mozzarella Cheese
Directions:
Clean mushrooms and let dry on a paper towel. Cut stems off and chop into small pieces. In a mixing bowl, combine mushroom stems and all of the ingredients, except cheese. Scoop mixture out equally into mushrooms and sprinkle with cheese. Cook at 350 degrees for 30 minutes.
