- Summer Squash Corn Fritters

- 2 1/2 c grated summer squash (about 1-1 1/4 lbs)
- 2 c corn
- 1 green onion - sliced
- 1/2 c. flour
- 1/2 c. shredded parmesan
- 1 egg - beaten
- 1 tsp chopped garlic
- 2 T lemon juice
- 3/4 tsp. salt
- 1 T chopped fresh parsley or 1 tsp dried parsley
- oil to fry
- Directions
- Grate zucchini (summer squash). Squeeze the grated zucchini dry. Combine all ingredients in a medium bowl. Mix until combined. Heat a thin layer of oil in a skillet. Measure out a 1/4 c of batter and place into skillet and slightly flatten with your spatula. I cooked 4 fritters at a time. Cook on each side for 4-5 minutes until browned. Repeat with remaining butter. Serve warm.
