Tilapia

Ingredients:
- 6 tilapia steaks
- 2 tsp salt
- 3 tbs fresh parsley, minced
- 1/2 cup butter
- 1/2 Cup flour
- 2 tsp ground pepper
- 1/4 cup freshly squeezed lemon
- 1 tbs dried thyme
- 3 tbs oil
- 1 lemon, peeled and cut into segments
Directions:
cut a stick of butter into slices; set aside. Peel a lemon and section slices; set aside. rinse fish fillets and pat dry. In a small bowl, combine flour, salt, pepper, and thyme. Put the dry mixture on a plate and completely dredge each fillet. Het 1 tablespoon oil on the skillet over medium heat, being careful not to burn it. Place 2 fillets in the skillet and saute for 1to 2 minutes on each side. remove to a warming plate and sprinkle with parsley and set in the oven. repeat with additional fillets. pour off the oil and wipe the skillet dry. return the skillet to the heat and begin melting butter an ounce at a time until bubbling hot, but not brown. quickly add the lemon juice and lemon slices. stir gently until ingredients are combined. pour over fillets. serve immediately.
