Veggie Stir Fry

Ingredients:
- 2 T. olive oil
- 1 tsp. sesame oil
- 2 tsp. chopped garlic
- 1/2 tsp. grated ginger
- 3 T. soy sauce
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 onion- sliced
- 2 stalks celery- sliced
- 1 carrot- sliced
- 6 oz shiitake mushrooms- stemmed and sliced
- 1 zucchini- sliced
- 1 red bell pepper- sliced
- 8 oz snap peas- topped and string removed
- 1 bunch of chard- sliced
- 1 c. sliced red cabbage
Directions:
In a large pan or wok heat both oils. Add in garlic and ginger and saute for 1 minute. Add in onions, carrots and celery. Saute for 3 minutes. Add in mushrooms, zucchini, bell pepper and peas. Season with salt and both peppers. Saute for 4 minutes. Add in chard, cabbage and soy sauce. Saute just until greens are wilted. Serve immediately.
*Add chicken or beef if desired.
