Cowboy Caviar

Cowboy caviar is a party favorite in my family. This is a recipe that someone will always bring to the family get together and it’s always gone in a matter of minutes.

Ingredients:

3 Roma tomatoes, diced

2 ripe avocados, diced

1/3 cup of red onion, diced

1 15 oz can of black beans, rinsed and drained

1 15 oz can black-eyed peas rinsed and drained

1 ½ cups of frozen sweet corn thawed

1 bell pepper diced (any color)

1 jalapeno, diced seeds removed!!

1/3 cup cilantro chopped

1/3 cup olive oil

2 tablespoons lime juice

2 tablespoons red wine vinegar

1 teaspoon sugar

½ teaspoon salt

½ teaspoon pepper

¼ teaspoon garlic powder

 

Directions:

Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, bell pepper, jalapeno, cilantro in a big bowl. Toss until well mixed.

In a separate bowl mis together olive oil, lime juice, vinegar, sugar, salt, pepper, and garlic powder until well mixed.

Finally add dressing to big bowl mix well until all is coated. Refrigerate and serve cold.
