My Mother's Egg Foo Yung
Pour 1 teaspoon oil into a heavy skillet. Heat over medium flame, Add green onion, onion, celery, ham and stir fry one minute. Pour in beaten egg. Cook over medium low heat, gently lifting edges to let uncooked portion of eggs flow underneath. Sprinkle with bean sprouts. Separate into four wedges. Turn each wedge over to quickly set the top. Serve immediately.
Serve with sprinkle of soy sauce and rice. Serves four.
