Elegant artichoke brunch: Eggs Sardou

Ingredients:

4 artichokes
eggs
10 oz box frozen spinach
1 envelope Hollandaise sauce

Directions:

Trim stems and tips of artichokes. Place in glass bowl, and cover bowl with microwavable plastic wrap. Add water 1/3 way up. Microwave 45-55 minutes until done, when a knife inserts in side of artichoke easily. Cool. Scrape out choke. Microwave spinach 6 minutes or follow package directions. Drain thoroughly. Prepare Hollandaise according to directions, using milk for liquid. Scramble eggs. Mix Â¼ cup Hollandaise sauce with spinach. Divide equally between artichokes. Top with scrambled egg, and serve with rest of sauce.
