Lemon Fritters

Ingredients:
- 3 large fresh lemons
- 1/8 tsp baking powder
- Batter:
- 2 eggs, seperated
- 1 c. all purpose flour
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1 T. unsalted butter, melted
- 1/2 c. milk
- canola oil for frying
- salt to taste
Directions:
In a pot of slightly salted water, add the lemons and baking powder. When the water comes to a boil, drain the lemons and refresh under cold water. Remove the ends of the lemons, cut in half lengthwise and then cut each half into quarters lengthwise. Remove and seeds and set aside.
Prepare the batter:
In a large mixing bowl, whisk the egg yolks and sift in the flour, salt, and baking powder. Add the butter and milk. In a medium bowl, whisk the egg whites with a pinch of salt until stiff. Fold into the batter. In a deep fryer or deep saucepan, heat the oil to 375 degrees. Coat the lemon pieces with the batter a few at a time and fry until golden. Remove the lemon pieces witted a slotted spoon and drain on paper towels. Lightly season with salt.
