Baked Shrimp

Ingredients:
- 1 lb. uncooked shrimp, shelled and deveined
- 1/3 Cup Olive Oil
- 1/4 Cup lemon juice
- grated rind of 1 lemon
- 2 Tbs chopped fresh parsley
- 1 Tbs honey
- 2 Tbs soy sauce
- pinch of cayenne
Directions:
Wash shrimp and pat dry. Combine the rest of the ingredients in a cowl. Coat the shrimp thoroughly and place in 9x13- inch baking dish. Pour the remaining sauce over the shrimp. Cover and marinate in the refridiator for at least 2 hours. Bake uncovered at 450 degrees for 10 minutes (stir once). Serve over rice or pasta. Makes 4 servings.
