- Banana Nut Cake

- 1 cup Butter
- 2 cups Sugar
- 2 Eggs
- 3 cups Flour
- 2 tsp Baking Soda
- 3/4 cup Milk
- 1 1/2 Mashed very ripe bananas
- Directions
- Preheat oven to 350. Cream butter and sugar; add eggs, beat well. Alternately add flour, baking soda and milk; mix well. Fold in bananas. Pour into oiled and floured; two 9" round cake pans or one 13" X 9"X 2" pan. Bake for 25 minutes or until toothpick comes out clean. Cool. Icing: 1- 8oz. pkg. cream cheese, 1- 1lb. box powdered sugar, 6 Tblspoons butter, 2tsp. vanilla, milk, 1 C. chopped pecans. Mix cream cheese, powdered supar and butter until well blended. Add vanilla and very small amount of milk until icing is smooth. Stir in the pecans and ice the cooled cake.

Cashew Pesto Kale Chips
Heat oven to 300. Place raw cashews in a food processor pulsing until they start to break up. Drizzle in olive oil and process well. Add cheese and mix well. Add enough water to make this mix slightly thicker than olive oil.
Place kale chips in a large bowl. Pour cashew mix over them and mix in well coating all of the chips.
Place on two cookie sheets in a single layer and bake for 25 minutes or until chips are crispy and coating is lightly browned. Gently remove the chips from the baking sheets with a spatula.
