Banana-Nut Oat Muffins
  • 2 T. salad oil
  • 2 oranges
  • 2 large eggs
  • 1 cup mashed ripe bananas
  • 1/4 c. honey
  • 1/4 cup firmly packed brown sugar
  • 1 cup quick-cooking oat bran cereal
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chopped walnuts
Oil 12 muffin cups or line with paper baking cups. Grate 1 tablespoon orange peel. Cut oranges in half and squeeze juice (1/2 cup). In a large bowl, combine orange peel, orange juice, 2 tablespoons oil, eggs, bananas, honey and brown sugar. Mix well. In a small bowl, mix cereal, baking powder, salt, and walnuts. Add to egg mixture and stir until evenly moistened. Spoon batter equally into muffin cups. Bake at 400 degrees for 20 to 25 minutes.
