Cha Cha’s Chili Corn Bread
Provided by:
Patricia Miller of Curtis Farms (From Farm Credit Services Southwest Cookbook)
Ingredients:
- 1 Cup White Corn Meal
- 3 Eggs, slightly beaten
- 3/4 Cup Cottage Cheese
- 1/3 Cup Melted Butter
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1 Can Del Monte White Creamed Corn
- 1 Can Del Monte Whole Sweet Corn (Drain off Liquid)
- 2 Cans Whole Green Chilies (cut into Strips)
- 1 Block Shredded Colby Jack Longhorn Cheese
Directions:
Mix all the above ingredients, except the chilies and cheese.
Grease 9x13 baking pan, place 1/2 of mixture in pan. Place layer of green chilies and salt lightly. Put layer of cheese over chilies and then place remaining mixture on top. Bake at 400 degrees for 35 minutes. Time varies depending on oven.
