Lemon and Lime Cornish Hens

Ingredients:
- 3 cornish hens, split in half
- salt
- black pepper
- 1 lemon, rind grated, juice squeezed
- 1/2 c. honey
- 1 lime, rind grated, juice squeezed
- 1/4 tsp. ground ginger
Directions:
Salt and pepper the hens. Lay them cut side down in a shallow roasting pan. Roast at 400 degrees for 30 minutes. Combine the grated rinds, juices, honey and ginger. Reduce the oven temperature to 325 and baste thoroughly with the mixture. Baste the hens for another hour, basting every 15 minutes with the pan juices. Serve with extra slice of citrus fruit.
