Lemon-Chive Potatoes
Provided by:
Southwest Family Citrus and Spenar Family
Ingredients:
- 1 1/2 lbs new potatoes
- 2 tbsp butter
- 1 tsp grated lemon peel
- 2 tbsp lemon juice
- 2 tsp snipped chives
- 1 tsp salt
- freshly ground pepper
Directions:
In a large saucepan, boil in 1-inch water, add potatoes. Cover and heat to boiling. Cook until tender (20 minutes), drain. Heat remaining ingredients just to boiling. Turn hot potatoes into serving dish, pour lemon butter over potatoes. makes four servings.
