Lemon Cucumbers
Provided by:
Southwest Family Citrus and Spenar Family
Ingredients:
- 1 1/2 Tbsp Salt
- 2 Cucumbers
- 3 Tbsp. Chopped Chives
- 1 Lemon, Squeezed
- 2 Tbsp Heavy Cream
- 1/2 Tsp. White Pepper
Directions:
Peel cucumbers and soak for 2 hours in a bowl of water with 1 tablespoon salt. Drain and cut into 1/4-inch slices. Sprinkle them with the rest of the salt and chill for 30 minutes. Beat the cream with the lemon juice, chives, and pepper until smooth. Rinse the cucumber and pat dry. Stir all ingredients and serve immediately. Serves 6.
