Lemon Veggies
  • 6 potatoes, unpeeled and chopped
  • 1/2 lb baby carrots
  • 6 tbsp butter, melted
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
Place potatoes and carrots in a steamer over boiling water and cover. Cook until tender, but still firm, about 15 minutes. To the melted butter, add the lemon juice, salt, pepper, and Italian seasoning. pour over potatoes and carrots and toss.
