Meal-in-one-Potatoes

Provided by:

Pennee Murphree, former cotton, wheat and alfalfa farmer

Ingredients:

1 medium potato
2 tbsp milk
2 tbsp sour cream
1/2 cup co chicken or ham, cubed
1 tbsp gr onion, chopped
1/2 tsp dry mustard
2 tbsp swiss or cheddar, grated

Directions:

Wash potato and puncture with fork once. Microwave 3-5 minutes or until soft to touch. Cut potato in half. Scoop out center and mash well with milk and sour cream. Mix in remaining ingredients except cheese. Spoon mixture back into potato skins. Sprinkle with cheese, microwave 3-4 minutes or until cheese melts.
